Just Happiling weekly (06/24/16)

This past week was very exciting for our Just Happiling family. We found a really cool organic product, which inspired a surprise in the Kitchen. There were some things going on in the sky, as well as down to earth in our garden. Continue reading to see what was happiling at home.

Something new

I don't know if I have mentioned this before, but just so you understand the importance of what I will be sharing next, I will mention it again. My husband is; 50 % Hispanic, 25% Norwegian, and 25% Danish. There are other roots further in the family tree, but those are the main ones. On the other hand, I am 100% Hispanic in my close heritage, but I did find out a few months ago, that I also have some Norwegian Viking in my DNA. This makes it really interesting for me, because now I feel more connected to my husband regarding our ancestry. With that in mind, we have been exploring different Norwegian concepts, especially in the culinary arts. For a few years now, we have adopted the tradition of making Norwegian cookies for Christmas to honor that part of our family. However, though we had seen other interesting recipes, we hadn't really jumped into preparing anything, that is, until this past weekend.


Not long ago, my husband found a very fun cooking youtube channel called How to Feed a Loon, while trying to surprise me with Norwegian pancakes. He followed their recipe, and just added 1/8 a teaspoon of cardamom spice to the batter. Once the delicious Norwegian pancakes were finished, my husband topped them with Festival Organic, Organic Lingon Preserves (picture above) and organic natural-flavored yogurt.

At the end, the fun thing is that you can top these beauties with anything you like the most. Doesn't this look delicious? To be honest, I couldn't wait to grab a bite. They were so good, that we had them for breakfast both Saturday and Sunday. I think this was a pretty sweet surprise, and therefore, I claim that my husband nailed it.

Another new thing I got this week, was a geeky t-shirt. As an artist, I am a big fan of parody or geeky attire that reminds me of my childhood. Since I am an 80's child, this T-shirt came in perfect, and added to that, I am a huge fan of Back to the Future, so that theme was definitely the cherry on top.


I have always dreamed of having my very own DeLorean, however, I think I need to get a driver's license first. Naa! I know a terrible driver when I see one, and I see one in my reflection every morning, haha. I think it is good to admit when you are not good at something. Oh well, Hotwheels edition will do!


Yup, got that for Christmas a few years ago. It's my favorite collectible that is not a doll. "Roads? Where we're going, we don't need roads."

Something Interesting

This week, both the full moon and the Summer Solsticle coincide on the same date. It had been about 70 years since the last time such an event happened, so it was a big deal around social media. A lot of people were taking photos of the moon and sharing them with #strawberrymoon. As a matter of fact, it was trending on Twitter, and that is how I actually found out about it. Did you know that the full moon during June is called a "Strawberry Moon"? I did not know this at all, and I kept on wondering where the pinkish tint was. I know it sounds silly, but it was the first time I had ever heard the term, and since they were calling last year´s lunar eclipses "blood moon" due the red tint of Earth's shadow, well, you can imagine my first impressions were on that side of the spectrum of ideas. But I understand, after all, the blue moon isn't really blue--or is it?


You can see a comparison in the photos above. To the left, the full moon or Strawberry moon of June 20th, and to the right, just our beloved moon getting there, right? I guess it still needed a bit more ripening. Sometimes the colors may look different, but I think it is a matter of the environment too. It was slightly cloudy high in the atmosphere during the strawberry moon last June 20th, 2016, and therefore my photo was a bit blurry in comparison to the picture I took 4 nights prior (In case you were wondering, I used a Nikon Coolpix P600). Did you get to see it?

Then on the 21st, it was National Sefie Day. Yes, I know, like we need a day out of the year to celebrate something we do everyday. But it was a lot of fun to see a lot of people taking selfies that were out of the ordinary. I used to like taking selfies, but now it's like; "Okay, after about 1,000 photos over the last decade, that's about enough of times I want to see myself". So unless I intend to share a product I am wearing, or share that I am at a special event, you might not see much of me around the web. Then again, I think I just included a photo in this blog post that enters this category. Oh well, who cares--1,001! Haha.


We kind of unveiled the mystery of the voices behind The Lopez Garden during National Selfie Day too. We have been making gardening videos of our organically grown edible garden in our small front yard since 2012, and I don't think our followers knew who we were all that time. Believe it or not, we are camera shy. I thought this celebration brought a great opportunity to finally show ourselves in that venue. Therefore, those who followed us on Instagram got their first peek at "Husband & Wife" from The Lopez Garden's youtube channel.

Something else we were celebrating was our new milestone on twitter. I wanted to thank everyone who joined in this new adventure, by creating some art. I know that we have been at "The happy baby blog" and "The happy reviewers blog" for years, but now that we are starting fresh with "Just Happiling" it is wonderful to see new people, and hopefully have our incredible followers from our other blogs come on board in our happiling journey. Hopefully there will be many more milestones to celebrate. Gracias, gracias, gracias!

At The Lopez Garden

The Summer Solsticle was a big deal for our garden too. A couple of days before Summer officially began, the flowers were lovely and blooming. We have never had our roses blooming all at the same time. It was eye candy for that long.



Then Summer came announcing itself with a blast, and by blast I mean a strong heat wave that burned all the roses; bah humbug! To be honest, I was having a bit of trouble myself figuring the time of the day. I noticed the sun came out at 5 am, then went down by 9 pm. I was minion-like; whoaaaaaat? It was supposed to be the longest day of the year, so I guess yeah--it made sense.


I am sure the tomatoes are loving it, but the other half of the plants, not so much. Oh well, I guess living in the desert is a bit unpredictable. All in all, I am just happy that so far, there has been no fires around our area.
